BEER-BATTERED: WALLEYE EDITION

Better known for its use with trout, cod fish or haddock we test the classic beer-batter recipe on walleye, or pickerel depending where you live. Whatever you call it, the end result is the same, beer-battered walleye is simply delicious. Walleye is already one of the best tasting fish in Canada, add a classic beer-battered taste and the final result will have you coming back for more again and again. Ingredients

  • Oil, for deep-frying
  • 3 cups of flour
  • ½ cup of flour
  • 1 1/2 tsp salt
  • 1/2 tsp cayenne pepper (Add more want a stronger spice)
  • 2 standard bottles of beer
  • 2-3 lbs walleye fillets
  • Pepper

Preparation

  1. Pour oil in deep-fryer and preheat to 370ºF. Mix 3 cups flour, salt and cayenne pepper in bowl, then whisk in beer until smooth in consistency.
  2. Place ½ cup of flour on plate.
  3. Pat walleye fillets dry with paper towel then cover in flour, shaking off excess. Dip each fillet one by one into batter, and then gently place in hot oil.
  4. Deep-fry until golden brown, turning once. Use slotted spoon to transfer cooked walleye fillets to a paper towel-lined plate.
  5. Sprinkle as desired with salt and pepper.
